If I order a custom harp, how are they made? Does the harp tech normally play the harp as they fine tune it, or do they use a machine?
I am a little squeamish about others playing my harmonicas.

If the harp has plastic comb dipping it in alcohol is the fastest and best way. I do not use wooden combs but as quick as alcohol evaporates a tech may use alcohol on this as well. I go this recommendation from a very well harp player and it is the the best way for me.
It disinfects and a harp should never have a foul odor. The harps I have seem to like it, especially if I run a blow drier over them for a few seconds. Alcohol also rids the harp of unwanted build up. Hope this helps.
Its how I clean my harps
I think a lot of them would ultrasonically clean them inches set up. But as @scott4 says plastic or aluminum comb dip em straight in alcohol or spray em with a alcohol mister I’ve got one in my gig bag I take every where with me after playing a quick spray both sides done.
I got given one of these for christmas, can sterelise a harmonica with using a liquid or heat. Although I still just use running tap water mostly as I’m the only one playing them.
The disinfection bag be effective but a $4 bottle of alcohol will get a a harp just as clean, quicker and a small bottle easily carried around easily. I am the only one playing my harps but dipping them in alcohol and running a blow drier over them to get the reeds as warm as your mouth is much easier and cost effective. The harp plays much better as well.
I spray mine ever time I use them plus I give them all a good clean about once a month. And I never let people just pick one up and blow it
